I bake so many cookies every week that I had forgotten how much I really love plain Jane oatmeal cookies. No chocolate, no raisins, no nuts.
Just butter, flour, spices, and oats okay, yes, there are a few more ingredients, but not many. But the flavor from the spices and the hearty texture of the oats kept me coming back to the cookie jar, cookie after cookie. They are so good! As they bake, the cookies start to flatten out, which gives them their thin and chewy texture. But as they cool off, the edges will become slightly crispy. The centers of the cookie will remain soft. The cookies have a glorious texture from the oats and a warm brown color from the spices.

Line 2 large baking sheets with parchment paper; set aside. In a large bowl with an electric mixer, beat butter and both sugars until fluffy. Mix in egg and vanilla until well blended. Stir into butter mixture. Gently stir in oats until well blended. Shape dough into rounded golfball-sized balls about 2 Tbsp.
Place on prepared baking sheet I fit 9 per sheet. Flatten with the bottom of a measuring cup dipped in sugar. Bake for minutes. Let cool on baking sheet 5 minutes before removing to a wire rack to cool completely.
